April is all about bringing the spring vibes. The new season has started and it’s a cracking month for produce. The start of the month catches the tail-end of Easter, plus there is Eid and Passover in April, and marathon season kicks off for those budding runners looking to fuel their training. I’m keeping my fingers crossed for warmer weather and al fresco dining by the end of the month. My pizza oven has been gathering dust and it’s high time it comes out of hibernation. I’ll be serving my first pizza of the year topped with greens to celebrate spring.

Pork mince is one of my favourite midweek ingredients as it’s cheap, versatile and a flavour sponge. This rice bowl is a whole new way of serving it that I’ll be trying this spring. The mince is flavoured with fish sauce, sriracha, lemongrass, lime, coriander and spring onions. The flavours are layered up even further with a side of pickled veg, all served on sticky rice.
