Well, Songkran has officially come and gone, which means it’s time to remove the flowered shirts, dry off, clean up, and go out and try some of the great new restaurants, as well as all the exciting new tasting menus, that Bangkok’s fine dining scene has to offer.

Visually striking playful presentations, and unconventional combinations of flavour at Canvas

Go “wild” at Canvas restaurant, where each dish is truly a work of artAt Canvas, the one-Michelin-starred restaurant on Thong Lor helmed by Chef Riley Sanders, each dish is literally a work of art – and that includes both the food and the plate! The current ‘Wild Things’ tasting menu is available as a 20-course feast (THB 6,900++), or as a 15-course meal (THB 4,900++), and will continue till June. It’s described by the chef as “a creative, sensory overload using tons of wild ingredients we’ve preserved, techniques we’ve researched and developed in-house, visually striking and playful presentations, and unconventional combinations of flavour.” As an example, take the ‘Chicken Fried Smoked Pigeon’, a dish using beautiful pigeons from Kanchanaburi, and presenting a different take on it by frying the smoked breasts with a panko – made from roasted chicken skin – and serving them with a couple of condiments and a sausage made from the thigh (served on the bone). Then there’s the hollowed out ‘Squarey Airy Bread’ course; seasoned with wild stingless bee honey, baked with wild almond oil, topped with different wild herbs and spices, and paired with a buffalo milk butter (made by first culturing the milk with pearl barley koji). These dishes, and all the others, are guaranteed to get you and your fellow diners talking… or they might just leave you speechless.

Chef Fabio Colautti explores the rich culinary heritage of his Italian hometown at Bella Sera

Get your fill of amazing homestyle Italian comfort food dishes at Bella SeraThe second floor of the Sofitel Sukhumvit hotel is now home to Bella Sera, which is Italian for “beautiful evening”. The menu here has been crafted under the concept of ‘Cucina Di Mamma Mia’ and pays loving tribute to the recipes passed down to Head Chef Fabio Colautti from his mother, all of which embody the rich culinary heritage of his hometown of Udine, in northeastern Italy. As he is also the man behind Pala Pizza Romana, it’s no surprise that Chef Fabio’s menu has multiple marvelous pizza pies to choose from, but be sure not to miss such other menu highlights as: Melanzane al forno come sempre, baked eggplant with cheese and tomato sauce (THB 350++); Lasagna Matta, a dish the chef’s mom cooks for family reunions (THB 490++); and Risotto ai Frutti di Mare, a traditional seafood risotto (THB 690++). Meanwhile, for veg friendly dishes try the stuffed spinach-ricotta ravioli pasta (THB 420++), or the Il Minestrone chunky vegetable soup (THB 350++). Finally, for dessert, how does a pistachio panna cotta (THB 350++), or a traditional tiramisu (THB 270++) sound?
