These Cold Brew Popsicles Are Our New Summer Obsession
We all love a cold brew, so why not make one even more refreshing by turning it into a Popsicle? The two distinct layers of cold brew and the sweetened cream make it feel like a sweet cream cold foam sitting on top from your favorite coffee shop. These take very little effort and can stay in your freezer all summer long. That way, your afternoon pick-me-up can be a pop instead of a second (or third!) cup of coffee. A really simple way to change these up is to add flavored simple syrups to the cold brew mixture. My go-to choices would be vanilla or hazelnut, but caramel or lavender would be incredible too. Of course, if you need a little treat without the caffeine, we have plenty of pops to choose from (some might even be boozy).
You can make your own concentrate or keep things simple by buying store-bought cold brew concentrate in this recipe. Just don’t forget that it's a concentrate, and needs to be watered down a bit. The easiest way to unmold these is to dip the molds into lukewarm water quickly or run it under lukewarm water from the sink for just a second or two. They should loosen easily with a firm tug.

Ingredients
- 1 1/2 c.
cold brew concentrate
- 1 1/2 tsp.
pure vanilla extract
- 6 tbsp.
heavy cream
- 2 tbsp.
sweetened condensed milk
Directions
- In a glass measuring cup, stir cold brew concentrate, vanilla, and 1/2 cup water. Divide between 8 (4-ounce) ice-pop molds. Freeze until solid, about 1 hour.
- In another glass measuring cup, whisk cream and milk until combined. Slowly pour on top of frozen cold brew mixture. Cover and insert sticks. Continue to freeze until solid, at least 4 hours or up to 2 months.
- Briefly dip molds into warm water to release.
