The method of preparing a delicious dish of soft yet drool-worthy chicken kebab varies from one household to another. You can pair it with roomali roti or eat it as a snack accompanied by chutneys and sliced onions. Suresh, from V. Kota, Chittoor, makes chicken kebabs in the best possible way so that one can enjoy the dish to their heart’s content.

Suresh makes sure to avoid using any colours or ingredients that may be harmful to the health. He prefers to use ingredients that are readily found in the kitchen. He believes that this way the aroma from his kitchen will be quite inviting for passers-by. He shared that many sellers set up their centres in the busiest areas of the city to attract more customers with its special boards, decorative lights, marinated chicken pieces and aroma.

Every centre across the city offers a unique taste to lure the customers. Some use attractive colours to make their foods look appetizing, while others use unhealthy amounts of salt. While the foods turn out good, in the long run, it affects the health. So, if you want to eat authentic chicken kebabs minus the harmful ingredients, you can follow Suresh’s recipe.

As per Suresh, the ingredients needed to make chicken kebabs are green chillies, corn flour, tandoor powder, mint, coriander, two eggs, kasuri methi, ginger and garlic paste, salt, lemon and pepper powder. He mixes these with the chicken piece and lets it marinate for a while. He then fries it in oil to make these super tasty chicken kebabs. He further shared that to make soft and juicy chicken kebabs it is important to follow the precise measurements.

Here is a step-by-step recipe-

  • Take one kilo of chicken and cut it into small pieces for the kebabs. Clean it thoroughly with water.
  • After cleaning, add an appropriate amount of green chillies, corn flour, tandoori chicken masala, mint, coriander, eggs, ginger and garlic paste, pepper powder, lemon, salt, and kasuri methi to the chicken. Let it marinate for an hour at least. Marination will allow the salt and spices to get infused into the meat.
  • Now, add a bit of oil to a pan and let it heat. Then fry the chicken till it turns a beautiful shade of red
  • Once done, remove it from the oil. This way, the kebabs will be healthier.
