These sticky toffee pudding mug cakes are indulgent to the max, and all you need is a microwave and 15 minutes to spare. If you’d rather cut down even more time, swap out homemade sauce for shop-bought instead.

Total Time: 5 mins

Ingredients

For the pudding

  • 50 g

    chopped dates

  • Pinch bicarbonate soda

  • 50 mL

    boiling water

  • 30 g

    salted butter, softened at room temperature

  • 1 tbsp.

    dark brown sugar

  • 1

    medium egg, beaten

  • 2 tbsp.

    self-raising flour

For the sauce

  • 30 mL

    double cream

  • 10 g

    salted butter

  • 2 tbsp.

    dark brown sugar

Directions

  1. Put the dates into one of the mugs with a pinch of bicarb and pour over the boiling water. Let sit for 5mins to soften.
  2. In a bowl, beat the rest of the pudding ingredients together until smooth. Mix through the date mixture and divide evenly between 2 large mugs.
  3. Put both mugs into the microwave and cook for about 1 1/2 – 2 minutes, in 30sec bursts, until just firm in the centre. Set aside to cool in the mugs for 5mins while you make the sauce.
  4. Put all of the ingredients for the sauce into another mug and microwave for 1 to 1 1/2 minutes, stirring every 30secs, until thick and bubbling.
  5. Run a knife around the inside of the mugs and tip out the puddings onto plates. Pour over the sticky toffee sauce and serve with ice cream if you’d like.
