I would certainly recommend people living with diabetes to consume lentils regularly. Lentils are a great source of fibre, vitamins, and minerals. Although lentils do contain carbohydrates and hence, will raise blood sugars, they are low in the glycemic index, which means it raises blood sugars slowly, rather than quickly, relative to other foods. Overall, they are a very healthy food. People living with diabetes can include lentils regularly in their diets, and can utilize the plate model to further reduce its impact on blood sugars. The plate model is filling 1/2 your plate with vegetables, 1/4 with protein and 1/4 with carbohydrates. Lentils are composed of about 50% protein and 50% carbohydrates.
