Yes, quinoa is a gluten free ancient grain and tolerated well by those on a gluten free diet. Quinoa is a great source of protein and an excellent source of zinc, iron, potassium, folate, Vitamin E and magnesium compared to gluten containing grains such as wheat, rye and barley. Quinoa may help to assist in lower cholesterol levels, and if you pick red or black grains, these contain higher amounts of antioxidants which can help fight DNA damaging molecules. Quinoa can be enjoyed as a whole grain in salads, casseroles or cereals, but also as a pasta to be enjoyed with your favourite pasta sauce. Despite the carbohydrates, the higher quality protein and fibre content make it a great addition to diabetic meals, by helping to keep blood sugar levels under control.
